You can keep 2-3 females in a 10gal tank comfortably. 4 max.
You can feed them the same lab blocks you feed your rats, as both species have very similar dietary needs. I would also add a little seed mix (just not too many sunflower seeds), rolled oats, Cheerios and a little dried fruit (for the mice and rats). They really enjoy some variety.

I feed my mice the same diet I feed my rats. The only difference is I use a bit less dog food in my mouse mix, as they seem to not like it very much and most of it goes to waste.

I end up changing my mix almost every time I restock it. I usually take one or two things out, try something new....then recycle the original things back in.
I feed my mix to both my rats and mice. I find they get bored with certain items if I use them all the time - like Cheerios. If I take it out for a week or two, and add it back in they love them.

Mice need more room than rats since they can't free range. Keeping them in a small tank for life is not a good idea. As for the lab blocks, would you want to eat the same thing every day? The good lab blocks may be nutritionally complete, but it'll make a sad life for mice in a small tank eating only lab blocks. They need a variety of food (seeds, grains, a variation on Suebee's mix, etc.), and the hugest possible cage you can give them with lots of wheels and tons of toys.

I do the same- a slightly different kind of dog food, a new cereal, different dried fruits, etc...if I try not to change anything they get bored and start to eat less and a lot goes to waste, like you said.
Mine seem to go through phases...they'll be obsessive about a certain kind of food in their mix and gorge on it for a month or two, and then get sick of it and never touch it again.
Spoiled little piggies, the whole lot of them.
And I pretty much agree with Kate...since mice can't free range, keeping them interested and occupied takes a lot more effort than with rats. I have a big 55 gal for all of my males and one for all of my females, with 10 gallon tanks or rubbermaid containers for maternity/lone male cages.
While 2 girls *could* be happy in a 10 gallon if given plenty to do, why not try adding a tank topper? It isn't terribly difficult or expensive to make one yourself, and it'll double the amount of space they have. There may be plans for making one in the cage stickys, I'd go over and check it out if it were me.
